Make a delicious and healthy crunchy chicken taco bowl. This recipe is spicy and creamy.
Ingredients
- 1 lb chicken breast
- 1 packet taco seasoning
- 1 tbsp olive oil
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup salsa
- 1/4 cup shredded cheddar cheese
- Tortilla chips for serving
Instructions
- Cook chicken: Dice chicken and cook with taco seasoning and olive oil.
- Prepare rice: Cook rice according to package directions.
- Assemble bowl: Layer rice, chicken, black beans, corn, lettuce, and tomatoes.
- Make the sauce: Mix sour cream/yogurt and salsa.
- Add toppings: Drizzle sauce over the bowl. Top with cheese and tortilla chips.
Notes
- Adjust spice level by adding more or less taco seasoning.
- Add your favorite taco toppings.
- For a vegetarian option, replace chicken with beans or tofu.
