Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1/4 cup honey
  • 1 tablespoon culinary lavender buds
  • 4 large eggs
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
  3. Bake crust for 8 minutes. Let cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add honey and lavender; mix well.
  6. Add eggs one at a time, then stir in heavy cream and vanilla.
  7. Pour filling over crust.
  8. Bake for 50-60 minutes, or until set.
  9. Cool completely, then chill for at least 4 hours.
