Description
A simple and delicious breakfast cake with bananas and Greek yogurt.
Ingredients
- 2 ripe bananas, mashed
- 1 cup Greek yogurt
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, mix mashed bananas, yogurt, sugar, egg, and vanilla.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Combine wet and dry ingredients. Do not overmix.
- Pour batter into the prepared pan.
- Bake for 45-50 minutes, or until a toothpick comes out clean.
- Let cool before slicing and serving.
Notes
- You can add chocolate chips or nuts.
- Adjust sweetness to your liking.
- Store leftovers in an airtight container.
