Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the onion and garlic. Drain off any excess grease.
  3. Stir in the diced tomatoes, enchilada sauce, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Warm the tortillas slightly to make them pliable.
  5. Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll up and place seam-side down in a 9×13 inch baking dish.
  6. Pour the remaining sauce mixture over the enchiladas.
  7. Sprinkle evenly with Monterey Jack and cheddar cheese.
  8. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.

Notes

  • Serve with your favorite toppings like sour cream, salsa, or avocado.
  • For a spicier enchilada, add a pinch of cayenne pepper to the beef mixture.
  • If you don’t have enchilada sauce, you can substitute with tomato sauce seasoned with chili powder and cumin.
