Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can enchilada sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown the ground beef with the onion and garlic. Drain off any excess grease.
- Stir in the diced tomatoes, enchilada sauce, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- Warm the tortillas slightly to make them pliable.
- Spoon about 1/4 cup of the beef mixture into the center of each tortilla. Roll up and place seam-side down in a 9×13 inch baking dish.
- Pour the remaining sauce mixture over the enchiladas.
- Sprinkle evenly with Monterey Jack and cheddar cheese.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.

- Serve with your favorite toppings like sour cream, salsa, or avocado.
- For a spicier enchilada, add a pinch of cayenne pepper to the beef mixture.
- If you don’t have enchilada sauce, you can substitute with tomato sauce seasoned with chili powder and cumin.
