Description
A simple and delicious one-pan chicken and potato bake.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1.5 lbs small potatoes, quartered
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes, onion, and garlic with olive oil, rosemary, thyme, salt, and pepper in a large bowl.
- Place potatoes in a single layer on a baking sheet.
- Season chicken with salt and pepper.
- Place chicken on top of the potatoes.
- Bake for 35-40 minutes, or until chicken is cooked through and potatoes are tender.
Notes
- You can substitute chicken breasts or tenders. Adjust cooking time accordingly.
- Feel free to add other vegetables like carrots or bell peppers.
- For extra flavor, add a squeeze of lemon juice after baking.
