Description

A simple and delicious one-pan chicken and potato bake.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 lbs small potatoes, quartered
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes, onion, and garlic with olive oil, rosemary, thyme, salt, and pepper in a large bowl.
  3. Place potatoes in a single layer on a baking sheet.
  4. Season chicken with salt and pepper.
  5. Place chicken on top of the potatoes.
  6. Bake for 35-40 minutes, or until chicken is cooked through and potatoes are tender.

Notes

  • You can substitute chicken breasts or tenders. Adjust cooking time accordingly.
  • Feel free to add other vegetables like carrots or bell peppers.
