Description

These Greek Yogurt Pumpkin Muffins are a healthy and delicious treat. They are perfect for fall and easy to make.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together granulated sugar, brown sugar, pumpkin puree, Greek yogurt, oil, eggs, and vanilla extract.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Fill muffin liners about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
