Description

A delicious and healthy bowl with maple dijon glazed chicken and sweet potatoes.


Ingredients

  • Chicken breasts (2)
  • Sweet potatoes (2, medium)
  • Olive oil (2 tbsp)
  • Maple syrup (2 tbsp)
  • Dijon mustard (1 tbsp)
  • Apple cider vinegar (1 tbsp)
  • Salt and pepper (to taste)
  • Broccoli florets (1 cup)
  • Red onion (1/2, sliced)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cube sweet potatoes and toss with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.
  3. Whisk together maple syrup, Dijon mustard, and apple cider vinegar.
  4. Season chicken with salt and pepper.
  5. Heat remaining olive oil in a pan. Cook chicken until browned.
  6. Add maple dijon glaze to chicken and cook until chicken is cooked through.
  7. Add broccoli and red onion to the sweet potatoes during the last 10 minutes of cooking.
  8. Assemble bowls with sweet potatoes, broccoli, red onion, and chicken.

Notes

  • Adjust sweetness by using more or less maple syrup.
  • Add other vegetables like Brussels sprouts.
  • Serve with quinoa or rice.
