Description
A delicious and healthy bowl with maple dijon glazed chicken and sweet potatoes.
Ingredients
- Chicken breasts (2)
- Sweet potatoes (2, medium)
- Olive oil (2 tbsp)
- Maple syrup (2 tbsp)
- Dijon mustard (1 tbsp)
- Apple cider vinegar (1 tbsp)
- Salt and pepper (to taste)
- Broccoli florets (1 cup)
- Red onion (1/2, sliced)
Instructions
- Preheat oven to 400°F (200°C).
- Cube sweet potatoes and toss with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.
- Whisk together maple syrup, Dijon mustard, and apple cider vinegar.
- Season chicken with salt and pepper.
- Heat remaining olive oil in a pan. Cook chicken until browned.
- Add maple dijon glaze to chicken and cook until chicken is cooked through.
- Add broccoli and red onion to the sweet potatoes during the last 10 minutes of cooking.
- Assemble bowls with sweet potatoes, broccoli, red onion, and chicken.
Notes
- Adjust sweetness by using more or less maple syrup.
- Add other vegetables like Brussels sprouts.
- Serve with quinoa or rice.
