Description

A refreshing pasta salad inspired by Mexican street corn.


Ingredients

  • Pasta (e.g., penne, rotini): 1 pound
  • Corn (fresh or frozen): 4 cups
  • Red bell pepper: 1, diced
  • Red onion: 1/2, diced
  • Cilantro: 1/4 cup, chopped
  • Cotija cheese: 1/2 cup, crumbled
  • Mayonnaise: 1/2 cup
  • Sour cream: 1/4 cup
  • Lime juice: 2 tablespoons
  • Chili powder: 1 teaspoon
  • Garlic powder: 1/2 teaspoon
  • Salt: to taste
  • Black pepper: to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. If using fresh corn, grill or roast until slightly charred. If using frozen, thaw.
  3. In a large bowl, combine pasta, corn, bell pepper, and red onion.
  4. In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper.
  5. Pour dressing over pasta mixture and toss to combine.
  6. Gently stir in cilantro and cotija cheese.
  7. Refrigerate for at least 30 minutes before serving.

Notes

  • Adjust seasonings to your liking.
  • Add a pinch of cayenne pepper for extra heat.
  • Black beans can be added.
