Description

A quick and colorful pasta salad with Rotini pasta, cherry tomatoes, cucumbers, bell peppers, red onion, and a simple dressing.


Ingredients

  • 1 (12-ounce) box Rotini pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Cook the Rotini pasta according to package directions. Drain and rinse with cold water; set aside.
  2. In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced green bell pepper, diced red bell pepper, and thinly sliced red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and black pepper until well combined.
  4. Add the cooled pasta to the vegetable mixture. Pour the dressing over the pasta and vegetables.
  5. Toss gently to coat all ingredients evenly.
  6. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
