Ingredients
- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped celery
- 1 clove garlic, minced
- 8 cups peeled and diced potatoes
- 6 cups chicken broth
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup half-and-half
- ½ cup shredded Cheddar cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Melt butter in a large pot over medium heat. Add onion, celery, and garlic; cook until softened, about 5 minutes.
- Stir in potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend a portion of the soup until creamy, leaving some potato chunks for texture.
- Stir in half-and-half and Cheddar cheese. Cook until heated through and cheese is melted, about 5 minutes.
- Garnish with fresh parsley, if desired, before serving.
Notes
- For a thicker soup, mash more of the potatoes.
