Ingredients
- Chicken thighs: 1.5 lbs
- Olive oil: 2 tbsp
- Salt: 1 tsp
- Black pepper: 0.5 tsp
- Sweet paprika: 1 tsp
- Garlic powder: 1 tsp
- Onion powder: 1 tsp
- Broccoli florets: 1 lb
- Sweet potato: 1 large, cubed
- Soy sauce: 2 tbsp
- Honey: 1 tbsp
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken thighs with salt, pepper, paprika, garlic powder, and onion powder.
- Toss broccoli and sweet potato with olive oil, salt, and pepper.
- Place chicken and vegetables on a baking sheet.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- In the last 5 minutes, drizzle chicken with soy sauce and honey.
- Let cool before portioning into meal prep containers.
