  • Chicken thighs: 1.5 lbs
  • Olive oil: 2 tbsp
  • Salt: 1 tsp
  • Black pepper: 0.5 tsp
  • Sweet paprika: 1 tsp
  • Garlic powder: 1 tsp
  • Onion powder: 1 tsp
  • Broccoli florets: 1 lb
  • Sweet potato: 1 large, cubed
  • Soy sauce: 2 tbsp
  • Honey: 1 tbsp


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs with salt, pepper, paprika, garlic powder, and onion powder.
  3. Toss broccoli and sweet potato with olive oil, salt, and pepper.
  4. Place chicken and vegetables on a baking sheet.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. In the last 5 minutes, drizzle chicken with soy sauce and honey.
  7. Let cool before portioning into meal prep containers.
