A classic Finnish salmon soup, Lohikeitto, is a creamy and flavorful dish. It features salmon, potatoes, and vegetables.


Ingredients

  • 1 lb salmon fillets, skin removed, cut into 1-inch pieces
  • 4 cups fish stock or water
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 leek, white and light green parts only, sliced
  • 1 small onion, chopped
  • 1 bay leaf
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon black peppercorns
  • 1 cup heavy cream
  • Salt to taste
  • Fresh dill, chopped, for garnish


Instructions

  1. In a large pot, combine the fish stock, potatoes, carrots, leek, onion, bay leaf, dill, and peppercorns.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes and carrots are tender.
  3. Gently add the salmon pieces to the pot.
  4. Simmer for 5-7 minutes, or until the salmon is cooked through.
  5. Stir in the heavy cream. Heat through, but do not boil.
  6. Season with salt to taste.
  7. Remove the bay leaf before serving.
  8. Garnish with fresh dill.

Notes

  • You can use other root vegetables like parsnips or celery root.
  • For a thinner soup, use less cream or add more stock.
  • If you don’t have fish stock, use water and a bouillon cube.
