Description
A classic Finnish salmon soup, Lohikeitto, is a creamy and flavorful dish. It features salmon, potatoes, and vegetables.
Ingredients
- 1 lb salmon fillets, skin removed, cut into 1-inch pieces
- 4 cups fish stock or water
- 4 medium potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 leek, white and light green parts only, sliced
- 1 small onion, chopped
- 1 bay leaf
- 1/2 teaspoon dried dill
- 1/4 teaspoon black peppercorns
- 1 cup heavy cream
- Salt to taste
- Fresh dill, chopped, for garnish
Instructions
- In a large pot, combine the fish stock, potatoes, carrots, leek, onion, bay leaf, dill, and peppercorns.
- Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes and carrots are tender.
- Gently add the salmon pieces to the pot.
- Simmer for 5-7 minutes, or until the salmon is cooked through.
- Stir in the heavy cream. Heat through, but do not boil.
- Season with salt to taste.
- Remove the bay leaf before serving.
- Garnish with fresh dill.
Notes
- You can use other root vegetables like parsnips or celery root.
- For a thinner soup, use less cream or add more stock.
- If you don’t have fish stock, use water and a bouillon cube.
