Ingredients
- Chicken thighs: 1.5 lbs
- Potatoes: 1.5 lbs, cubed
- Butter: 4 tbsp
- Garlic: 4 cloves, minced
- Olive oil: 2 tbsp
- Dried rosemary: 1 tsp
- Dried thyme: 1 tsp
- Salt: To taste
- Black pepper: To taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
- Melt butter, mix with garlic, rosemary, and thyme.
- Season chicken with salt and pepper.
- Add chicken to the baking dish with potatoes.
- Pour garlic butter over chicken and potatoes.
- Roast for 25-30 minutes, or until chicken is cooked.
