A refreshing and healthy Greek chicken salad with cucumber and feta, perfect for lunch.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, halved
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, diced cucumber, crumbled feta, red onion, and olives.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the chicken salad and mix well to combine.
- Serve immediately or chill for later.
