Description

These Greek yogurt banana mini muffins are a healthy and delicious snack for kids. They are easy to make and perfect for breakfast or any time.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup mashed ripe banana (about 2 medium bananas)
  • 3/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a mini muffin tin.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, whisk together sugar, melted butter, and egg.
  4. Add mashed banana, Greek yogurt, and vanilla extract to the wet ingredients. Mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fill each mini muffin cup about 2/3 full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
