Description
Make delicious and healthy Greek yogurt blueberry muffins. They are moist, packed with protein, and easy to bake.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup Greek yogurt
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, mix Greek yogurt, milk, egg, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack.
Notes
- You can use frozen blueberries; do not thaw them first.
- For extra sweetness, sprinkle some sugar on top of the muffins before baking.
- Store leftover muffins in an airtight container.
