Description

Make delicious and healthy Greek yogurt blueberry muffins. They are moist, packed with protein, and easy to bake.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix Greek yogurt, milk, egg, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • You can use frozen blueberries; do not thaw them first.
  • For extra sweetness, sprinkle some sugar on top of the muffins before baking.
  • Store leftover muffins in an airtight container.
