Description

Make delicious Greek Yogurt Blueberry Muffins. They are bakery-style and light.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries


Instructions

  1. Preheat oven to 400°F (200°C). Line a muffin tin with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together yogurt, milk, egg, and vanilla.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Gently fold in blueberries.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • Do not overmix the batter.
  • You can use frozen blueberries; do not thaw them first.
  • For bakery-style tops, you can sprinkle with coarse sugar before baking.
