A delicious and healthy Grilled Shrimp Bowl with Creamy Garlic Sauce.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup chopped mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- Creamy Garlic Sauce:
- 1/2 cup Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Toss shrimp with olive oil, garlic powder, salt, and pepper.
- Grill shrimp for 2-3 minutes per side, until pink and cooked through.
- Prepare the Creamy Garlic Sauce by whisking together Greek yogurt, minced garlic, lemon juice, parsley, salt, and pepper.
- Assemble bowls: Place quinoa, mixed greens, cherry tomatoes, and red onion in a bowl.
- Top with grilled shrimp and drizzle with Creamy Garlic Sauce.
- Serve immediately.
