  • 1 cup cooked quinoa
  • 1 cup chopped mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Creamy Garlic Sauce:
  • 1/2 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. Toss shrimp with olive oil, garlic powder, salt, and pepper.
  3. Grill shrimp for 2-3 minutes per side, until pink and cooked through.
