Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup chopped mixed vegetables (broccoli, bell peppers, etc.)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup salsa
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper.
- Grill the shrimp for 2-3 minutes per side, or until pink and cooked through.
- In meal prep containers, divide the quinoa, mixed vegetables, and black beans.
- Top with the grilled shrimp and salsa.
- Store in the refrigerator for up to 4 days.
