Ingredients

  • 1 pound ground turkey
  • 1 cup quinoa
  • 2 cups water or broth
  • 5 cups fresh spinach
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Cook quinoa: Rinse quinoa. Combine with water or broth in a saucepan. Bring to a boil, then simmer until cooked.
  2. Cook turkey: Brown ground turkey with onion and garlic in olive oil. Season with salt and pepper.
  3. Combine: Add spinach to the turkey mixture and cook until wilted.
  4. Assemble: Place quinoa in bowls. Top with turkey and spinach mixture.
