Description
A healthy and delicious ground turkey quinoa bowl with spinach.
Ingredients
- 1 pound ground turkey
- 1 cup quinoa
- 2 cups water or broth
- 5 cups fresh spinach
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook quinoa: Rinse quinoa. Combine with water or broth in a saucepan. Bring to a boil, then simmer until cooked.
- Cook turkey: Brown ground turkey with onion and garlic in olive oil. Season with salt and pepper.
- Combine: Add spinach to the turkey mixture and cook until wilted.
- Assemble: Place quinoa in bowls. Top with turkey and spinach mixture.
