Description

A quick and easy skillet meal made with ground turkey and zucchini.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium zucchini, chopped
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Add onion and cook until softened, about 3 minutes.
  4. Stir in zucchini and garlic and cook for 2 minutes.
  5. Add diced tomatoes, Italian seasoning, salt, and pepper.
  6. Bring to a simmer and cook for 10-15 minutes, or until zucchini is tender.
  7. Serve hot.
