Description
A quick and easy skillet meal made with ground turkey and zucchini.
Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium zucchini, chopped
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add onion and cook until softened, about 3 minutes.
- Stir in zucchini and garlic and cook for 2 minutes.
- Add diced tomatoes, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook for 10-15 minutes, or until zucchini is tender.
- Serve hot.
Notes
- You can add other vegetables, such as bell peppers or mushrooms.
- Serve with a side of rice or quinoa.
- Garnish with fresh herbs like parsley or basil.
