Ingredients
- 1 lb flank steak, thinly sliced
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Season steak with oregano, salt, and pepper.
- Heat olive oil in a pan over medium-high heat and cook steak for 3-4 minutes per side.
- Let steak rest for 5 minutes, then slice thinly.
- Divide quinoa among bowls and top with steak, tomatoes, cucumber, onion, olives, and feta.
