Ingredients
- Chicken breasts (2)
- Dried herbs (Italian blend, 2 tbsp)
- Breadcrumbs (1/2 cup)
- Grated Parmesan cheese (1/4 cup)
- Olive oil (2 tbsp)
- Salt and pepper (to taste)
- Mixed greens (5 cups)
- Cherry tomatoes (1 cup, halved)
- Cucumber (1/2, sliced)
- Balsamic vinaigrette (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix herbs, breadcrumbs, and Parmesan.
- Drizzle chicken with olive oil, then coat with herb mixture.
- Season with salt and pepper.
- Bake chicken for 20-25 minutes, until cooked through.
- Toss mixed greens, tomatoes, and cucumber.
- Serve chicken over salad; drizzle with vinaigrette.
