Juicy herb and garlic marinated chicken kabobs.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, herbs, salt, and pepper.
- Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
- Thread chicken and vegetables onto skewers.
- Grill skewers over medium heat for 15-20 minutes, turning occasionally, until chicken is cooked through.
- Serve hot.
Notes
- Soak wooden skewers in water for 30 minutes before use to prevent burning.
- You can substitute other vegetables like zucchini or cherry tomatoes.
- For extra flavor, add a pinch of red pepper flakes to the marinade.
