Description
A refreshing and high-protein salad perfect for summer. This dish combines the sweetness of corn with succulent shrimp.
Ingredients
- 1 pound shrimp, cooked and peeled
- 2 cups corn kernels, grilled or boiled
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook and peel the shrimp.
- Grill or boil the corn kernels.
- Dice the red bell pepper and chop the red onion and cilantro.
- In a large bowl, combine the shrimp, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil and lime juice. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for later.
