Ingredients
- 1 pound ground turkey
- 1 packet taco seasoning
- 1 cup cooked quinoa
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn
- 1 cup chopped romaine lettuce
- 1/2 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/4 cup salsa
- 2 tablespoons plain Greek yogurt
- Optional toppings: avocado, cilantro, lime wedges
Instructions
- Cook ground turkey in a skillet until browned. Drain any excess fat.
- Stir in taco seasoning and cook according to package directions.
- In a bowl, combine quinoa, black beans, corn, lettuce, tomatoes, and red onion.
- Top with the cooked turkey.
- Drizzle with salsa and Greek yogurt.
- Add optional toppings as desired.
