Ingredients

  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 cup cooked quinoa
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup chopped romaine lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup salsa
  • 2 tablespoons plain Greek yogurt
  • Optional toppings: avocado, cilantro, lime wedges


Instructions

  1. Cook ground turkey in a skillet until browned. Drain any excess fat.
  2. Stir in taco seasoning and cook according to package directions.
  3. In a bowl, combine quinoa, black beans, corn, lettuce, tomatoes, and red onion.
  4. Top with the cooked turkey.
  5. Drizzle with salsa and Greek yogurt.
  6. Add optional toppings as desired.
