Hobo Casserole with Ground Beef (60 Minutes)

Description

This hobo casserole combines ground beef, potatoes, and vegetables in a simple baked dish.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can (10.75 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 medium potatoes, thinly sliced
  • 1 can (15 oz) sliced carrots, drained
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef and onion in a large skillet; drain any fat.
  3. In a bowl, combine cream of mushroom soup, milk, salt, and pepper.
  4. Layer half the sliced potatoes in a 9×13 inch baking dish.
  5. Spread the ground beef mixture over the potatoes.
  6. Top with drained sliced carrots.
  7. Pour half of the soup mixture over the carrots.
  8. Add the remaining sliced potatoes.
  9. Pour the remaining soup mixture over the potatoes.
  10. Cover with foil and bake for 45 minutes.
  11. Remove foil, sprinkle with cheddar cheese, and bake for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.

Notes

  • For a richer flavor, use beef broth instead of milk.
  • Any combination of vegetables can be used in this casserole.
