Description
This hobo casserole combines ground beef, potatoes, and vegetables in a simple baked dish.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 1 can (10.75 oz) cream of mushroom soup
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 4 medium potatoes, thinly sliced
- 1 can (15 oz) sliced carrots, drained
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef and onion in a large skillet; drain any fat.
- In a bowl, combine cream of mushroom soup, milk, salt, and pepper.
- Layer half the sliced potatoes in a 9×13 inch baking dish.
- Spread the ground beef mixture over the potatoes.
- Top with drained sliced carrots.
- Pour half of the soup mixture over the carrots.
- Add the remaining sliced potatoes.
- Pour the remaining soup mixture over the potatoes.
- Cover with foil and bake for 45 minutes.
- Remove foil, sprinkle with cheddar cheese, and bake for another 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
Notes
- For a richer flavor, use beef broth instead of milk.
- Any combination of vegetables can be used in this casserole.
- Adjust salt and pepper to taste.
