Description
A classic Italian soup with small meatballs, vegetables, and pasta.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 cups chicken broth
- 1 cup small pasta, such as ditalini
- 5 ounces fresh spinach, chopped
Instructions
- In a bowl, mix ground beef, breadcrumbs, egg, Parmesan cheese, garlic powder, salt, and pepper.
- Form into small meatballs.
- Heat olive oil in a large pot. Brown meatballs.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Pour in chicken broth and bring to a boil.
- Add pasta and cook until al dente.
- Stir in spinach and cook until wilted.
- Season to taste.
Notes
- You can use store-bought meatballs to save time.
- Add more vegetables like zucchini or kale.
- Adjust seasonings to your preference.
