Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1/4 cup chicken broth
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)


Instructions

  1. In a bowl, toss chicken with cornstarch.
  2. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, minced garlic, chicken broth, oyster sauce, and brown sugar.
  3. Heat oil in a large skillet or wok over medium-high heat.
  4. Add chicken and cook until browned.
  5. Add bell peppers and onion; cook until slightly softened.
  6. Pour sauce over chicken and vegetables.
  7. Cook, stirring, until sauce thickens.
  8. Serve over cooked rice, garnished with sesame seeds and green onions if desired.
