Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/2 cup plain yogurt
- 1 tablespoon lemon zest
- 1/4 cup fresh blueberries
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a small cake pan.
- Whisk together flour, baking powder, and salt.
- Cream sugar and butter. Beat in egg, then yogurt and lemon zest.
- Gradually add dry ingredients to wet ingredients.
- Gently fold in blueberries.
- Pour batter into pan and bake for 25-30 minutes.
- Let cool before serving.

- You can substitute frozen blueberries.
