Description
These light and fluffy lemon Greek yogurt muffins are a delightful treat. They are easy to make and perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup Greek yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together Greek yogurt, milk, oil, eggs, lemon zest, and lemon juice.
- Pour wet ingredients into dry ingredients and mix until just combined. Do not overmix.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, you can add a lemon glaze after the muffins have cooled.
- You can substitute regular yogurt for Greek yogurt.
- Store muffins in an airtight container at room temperature for up to 3 days.
