  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 tsp lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup buttermilk
  • 1/4 cup poppy seeds
  • For the Frosting: 1 cup blackberries, 1 cup powdered sugar, 1/2 cup (1 stick) unsalted butter, softened


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream together sugar and butter. Beat in eggs, lemon zest, and lemon juice.
  4. Add dry ingredients alternately with buttermilk.
  5. Fold in poppy seeds.
  6. Fill cupcake liners. Bake for 18-20 minutes.
  7. For frosting: Blend blackberries. Whisk butter and powdered sugar. Add blackberry puree.
  8. Frost cupcakes when cooled.
