A delightful lemon poppy seed loaf. Perfect for tea parties or a quick treat.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup lemon juice
- 2 tbsp poppy seeds
- For the glaze: 1 cup powdered sugar, 2-3 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- Whisk together flour, baking powder, baking soda, and salt.
- Cream together sugar and butter. Beat in eggs.
- Add milk and lemon juice.
- Gradually add dry ingredients. Stir in poppy seeds.
- Pour batter into pan and bake for 50-60 minutes.
- Let cool. Whisk glaze ingredients and drizzle over loaf.
Notes
- Adjust baking time as needed.
- Add more lemon juice for a stronger flavor.
- Store in an airtight container.
