Description

A creamy potato salad loaded with bacon, cheddar cheese, and green onions, mimicking the flavors of a baked potato.


Ingredients

  • 2.5 lbs russet potatoes, peeled and cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions


Instructions

  1. Place potatoes in a large pot and cover with cold water by 1 inch. Bring to a boil, then reduce heat and simmer until tender, about 10-15 minutes. Drain well and let cool slightly.
  2. In a large bowl, whisk together mayonnaise, sour cream, milk, apple cider vinegar, salt, and pepper.
  3. Add the slightly cooled potatoes to the dressing. Gently fold to combine.
  4. Stir in the crumbled bacon, shredded cheddar cheese, and chopped green onions.
  5. Chill for at least 1 hour before serving to allow flavors to meld.
