Ingredients
- 1 tbsp olive oil
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 large russet potatoes, peeled and diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tbsp chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 5 minutes.
- Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Stir in taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens.
- Meanwhile, boil or steam diced potatoes until tender, about 10-15 minutes. Drain well.
- Divide cooked potatoes among serving bowls. Top with the taco meat mixture.
- Sprinkle with shredded cheddar cheese.
- Add a dollop of sour cream and garnish with fresh cilantro.
- Season with salt and pepper to taste.
