This low-carb egg roll bowl offers all the flavors of an egg roll without the wrap. It’s a quick, easy, and healthy meal.
Ingredients
- 1 pound ground pork
- 1 tablespoon sesame oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) bag coleslaw mix
- 1/4 cup soy sauce (or coconut aminos for paleo)
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Brown the ground pork in a skillet over medium-high heat. Drain any excess grease.
- Add sesame oil, onion, and garlic. Cook until softened.
- Stir in coleslaw mix, soy sauce, rice vinegar, ginger, garlic powder, salt, and pepper.
- Cook until the coleslaw is tender-crisp, about 5-7 minutes.
- Garnish with chopped green onions and serve.
Notes
- You can substitute ground turkey or chicken for the pork.
- Add your favorite vegetables like shredded carrots or bell peppers.
- Adjust the amount of soy sauce to your taste.
