Ingredients
- Chicken breasts (2)
- Sweet potatoes (2, medium)
- Olive oil (2 tbsp)
- Maple syrup (2 tbsp)
- Dijon mustard (2 tbsp)
- Honey (1 tbsp)
- Salt and pepper to taste
- Cooked quinoa or rice (1 cup)
- Broccoli florets (1 cup)
- Optional toppings: avocado, red onion, seeds
Instructions
- Preheat oven to 400°F (200°C).
- Cube sweet potatoes and toss with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.
- Whisk together maple syrup, Dijon mustard, honey, and remaining olive oil.
- Season chicken breasts with salt and pepper.
- Place chicken on a baking sheet and brush with maple dijon mixture.
- Bake chicken for 20-25 minutes, or until cooked through (internal temp 165°F/74°C).
- Steam or roast broccoli.
- Assemble bowls: quinoa/rice, sweet potatoes, chicken, broccoli, and toppings.
