Ingredients

  • Chicken breast: 1 lb
  • Sweet potato: 1 large
  • Broccoli florets: 2 cups
  • Maple syrup: 2 tbsp
  • Garlic: 4 cloves, minced
  • Soy sauce: 2 tbsp
  • Olive oil: 1 tbsp
  • Salt and pepper: to taste
  • Cooked quinoa or rice: for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cube sweet potato. Toss with olive oil, salt, and pepper. Roast for 20 minutes.
  3. Marinate chicken in maple syrup, garlic, and soy sauce.
  4. Cook chicken in a pan until cooked through.
  5. Steam or roast broccoli.
  6. Assemble bowls with quinoa/rice, chicken, sweet potato, and broccoli.
