  • Quinoa: 1/2 cup, cooked
  • Cucumber: 1/2 cup, chopped
  • Cherry Tomatoes: 1/2 cup, halved
  • Red Onion: 1/4 cup, thinly sliced
  • Kalamata Olives: 1/4 cup, pitted
  • Feta Cheese: 2 tbsp, crumbled
  • Hummus: 2 tbsp


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with olive oil, lemon juice, oregano, salt, and pepper.
  3. Bake chicken for 20-25 minutes, or until cooked through.
  4. Cook quinoa according to package directions.
  5. Assemble the bowl: Place quinoa in the bowl.
