Ingredients
- Chicken Breast: 6 oz
- Olive Oil: 1 tbsp
- Lemon Juice: 1 tbsp
- Dried Oregano: 1 tsp
- Salt: to taste
- Black Pepper: to taste
- Quinoa: 1/2 cup, cooked
- Cucumber: 1/2 cup, chopped
- Cherry Tomatoes: 1/2 cup, halved
- Red Onion: 1/4 cup, thinly sliced
- Kalamata Olives: 1/4 cup, pitted
- Feta Cheese: 2 tbsp, crumbled
- Hummus: 2 tbsp
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with olive oil, lemon juice, oregano, salt, and pepper.
- Bake chicken for 20-25 minutes, or until cooked through.
- Cook quinoa according to package directions.
- Assemble the bowl: Place quinoa in the bowl.
- Top with chicken, cucumber, tomatoes, red onion, olives, feta, and hummus.
- Serve immediately.

- You can grill the chicken instead of baking it.
