  • Cherry tomatoes: 1 cup, halved
  • Red onion: 1/2, thinly sliced
  • Kalamata olives: 1/2 cup, pitted
  • Feta cheese: 1/2 cup, crumbled
  • Cooked quinoa or rice: 2 cups
  • Hummus: for serving


Instructions

  1. Cut chicken into bite-sized pieces.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper.
  3. Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
  4. Heat a grill or grill pan to medium-high heat.
