Ingredients
- Chicken breast: 1.5 lbs
- Olive oil: 2 tbsp
- Lemon juice: 2 tbsp
- Garlic: 2 cloves, minced
- Dried oregano: 1 tsp
- Dried rosemary: 1 tsp
- Salt: to taste
- Black pepper: to taste
- Cucumber: 1, diced
- Cherry tomatoes: 1 cup, halved
- Red onion: 1/2, thinly sliced
- Kalamata olives: 1/2 cup, pitted
- Feta cheese: 1/2 cup, crumbled
- Cooked quinoa or rice: 2 cups
- Hummus: for serving
Instructions
- Cut chicken into bite-sized pieces.
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper.
- Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
- Heat a grill or grill pan to medium-high heat.
- Thread chicken onto skewers.
- Grill chicken skewers for 3-4 minutes per side, or until cooked through.
- While chicken cooks, prepare the bowl ingredients.
- Combine cucumber, tomatoes, red onion, and olives in a bowl.
- Assemble bowls with quinoa or rice, chicken skewers, vegetable mixture, feta cheese, and hummus.
Notes
- You can substitute chicken thighs for chicken breast.
- Feel free to add other vegetables, like bell peppers.
- For extra flavor, add a drizzle of olive oil and a squeeze of lemon juice before serving.
