A fresh and healthy Mediterranean chicken couscous bowl.
Ingredients
- Chicken breast: 1 (cooked and diced)
- Couscous: 1 cup (cooked)
- Cucumber: 1/2 cup (diced)
- Cherry tomatoes: 1/2 cup (halved)
- Red onion: 1/4 cup (thinly sliced)
- Kalamata olives: 1/4 cup (sliced)
- Feta cheese: 1/4 cup (crumbled)
- Lemon juice: 2 tablespoons
- Olive oil: 1 tablespoon
- Dried oregano: 1 teaspoon
- Salt and pepper: to taste
Instructions
- Cook couscous according to package directions.
- Cook and dice chicken breast.
- Chop cucumber, tomatoes, and red onion. Slice olives.
- In a bowl, combine couscous, chicken, cucumber, tomatoes, red onion, and olives.
- In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper.
- Pour dressing over the couscous mixture and toss to combine.
- Top with feta cheese.
- Serve immediately or chill for later.
