Ingredients

  • Chicken breast: 1 (cooked and diced)
  • Couscous: 1 cup (cooked)
  • Cucumber: 1/2 cup (diced)
  • Cherry tomatoes: 1/2 cup (halved)
  • Red onion: 1/4 cup (thinly sliced)
  • Kalamata olives: 1/4 cup (sliced)
  • Feta cheese: 1/4 cup (crumbled)
  • Lemon juice: 2 tablespoons
  • Olive oil: 1 tablespoon
  • Dried oregano: 1 teaspoon
  • Salt and pepper: to taste


Instructions

  1. Cook couscous according to package directions.
  2. Cook and dice chicken breast.
  3. Chop cucumber, tomatoes, and red onion. Slice olives.
  4. In a bowl, combine couscous, chicken, cucumber, tomatoes, red onion, and olives.
  5. In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper.
  6. Pour dressing over the couscous mixture and toss to combine.
  7. Top with feta cheese.
