Ingredients

  • Chicken breasts (2),
  • Olive oil (2 tbsp),
  • Lemon juice (1 tbsp),
  • Dried oregano (1 tsp),
  • Dried basil (1 tsp),
  • Salt (to taste),
  • Black pepper (to taste),
  • Bell peppers (assorted colors, 1 cup, chopped),
  • Zucchini (1 medium, chopped),
  • Red onion (1/2, sliced),
  • Cherry tomatoes (1 cup, halved),
  • Cucumber (1/2 cup, diced),
  • Feta cheese (1/4 cup, crumbled),
  • Hummus (2 tbsp),
  • Cooked quinoa or couscous (1 cup)


Instructions

  1. Marinate chicken: Combine olive oil, lemon juice, oregano, basil, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
  2. Grill chicken: Grill chicken over medium heat until cooked through. Let rest, then slice.
