Description
Simple and flavorful Mediterranean grilled chicken skewers.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
- Thread chicken, bell peppers, and red onion onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through.
- Serve immediately.
Notes
- You can substitute chicken thighs for chicken breasts.
- Feel free to add other vegetables, such as zucchini or cherry tomatoes.
- For extra flavor, add a pinch of red pepper flakes to the marinade.
