Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Add chicken to the marinade and toss to coat. Marinate for at least 30 minutes.
  3. Thread chicken, bell peppers, and red onion onto skewers.
  4. Preheat grill to medium-high heat.
  5. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through.
