Description
A healthy and flavorful Mediterranean-inspired meal featuring ground turkey and couscous.
Ingredients
- 1 pound ground turkey
- 1 cup couscous
- 1.5 cups chicken broth
- 1 red bell pepper, chopped
- 1/2 cup red onion, chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Season with salt, pepper, and oregano.
- Add red bell pepper and red onion to the skillet and cook until softened.
- Stir in couscous and chicken broth.
- Bring to a boil, then reduce heat and simmer for 5 minutes, or until the couscous is cooked and the liquid is absorbed.
- Stir in olives and feta cheese.
- Serve immediately.
Notes
- You can add other vegetables like zucchini or spinach.
- Adjust the seasoning to your taste.
- For extra flavor, use a flavored olive oil.
