Description

A healthy and flavorful Mediterranean-inspired meal featuring ground turkey and couscous.


Ingredients

  • 1 pound ground turkey
  • 1 cup couscous
  • 1.5 cups chicken broth
  • 1 red bell pepper, chopped
  • 1/2 cup red onion, chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it up with a spoon.
  3. Season with salt, pepper, and oregano.
  4. Add red bell pepper and red onion to the skillet and cook until softened.
  5. Stir in couscous and chicken broth.
  6. Bring to a boil, then reduce heat and simmer for 5 minutes, or until the couscous is cooked and the liquid is absorbed.
  7. Stir in olives and feta cheese.
  8. Serve immediately.
