Description
A refreshing Mediterranean pasta salad with feta cheese and olives.
Ingredients
- Pasta (250g)
- Feta cheese (150g)
- Kalamata olives (1/2 cup)
- Cherry tomatoes (1 cup)
- Cucumber (1/2, diced)
- Red onion (1/4, thinly sliced)
- Olive oil (1/4 cup)
- Red wine vinegar (2 tablespoons)
- Dried oregano (1 teaspoon)
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse.
- In a large bowl, combine cooked pasta, feta, olives, tomatoes, cucumber, and red onion.
- In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
- Pour dressing over pasta salad and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can add grilled chicken or chickpeas for extra protein.
- Feel free to adjust the vegetables based on your preference.
