Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 packet taco seasoning
- 1 (15-ounce) can black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Grill chicken breasts. Season with taco seasoning. Cook until done.
- Let the chicken cool, then dice or shred it.
- In a large bowl, combine black beans, corn, bell pepper, and red onion.
- Add the cooked chicken, avocado, and cilantro.
- Drizzle with lime juice and season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill for later.
