A quick and easy one-pot turkey and vegetable pasta recipe.
Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 cup pasta (penne, rotini, or your choice)
- 2 cups mixed vegetables (broccoli, carrots, zucchini)
- Salt and pepper to taste
- Optional: fresh basil for garnish
Instructions
- Brown the ground turkey in a pot with olive oil. Drain any excess grease.
- Add onion and garlic; cook until softened.
- Pour in crushed tomatoes and vegetable broth.
- Stir in pasta and vegetables.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until pasta is cooked and vegetables are tender (about 15-20 minutes).
- Garnish with fresh basil, if desired.
Notes
- You can substitute ground chicken or beef for turkey.
- Add other vegetables like bell peppers or spinach.
- Adjust cooking time based on your pasta type.
