A quick and easy one-pot turkey and vegetable pasta recipe.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup pasta (penne, rotini, or your choice)
  • 2 cups mixed vegetables (broccoli, carrots, zucchini)
  • Salt and pepper to taste
  • Optional: fresh basil for garnish


Instructions

  1. Brown the ground turkey in a pot with olive oil. Drain any excess grease.
  2. Add onion and garlic; cook until softened.
  3. Pour in crushed tomatoes and vegetable broth.
  4. Stir in pasta and vegetables.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer until pasta is cooked and vegetables are tender (about 15-20 minutes).
  7. Garnish with fresh basil, if desired.
