Description
A one-pan pasta dish featuring mushrooms, spinach, and Parmesan cheese.
Ingredients
- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 2 cups vegetable broth
- 1 cup milk
- 8 oz linguine, broken in half
- 5 oz fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened, about 5-7 minutes.
- Add onion and cook until translucent, about 5 minutes.
- Stir in garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in vegetable broth and milk. Bring to a simmer.
- Add broken linguine to the skillet, ensuring it’s mostly submerged. Cook, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed, about 10-12 minutes.
- Stir in fresh spinach until wilted.
- Remove from heat and stir in Parmesan cheese.
- Season with salt and black pepper to taste. Serve immediately.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Adjust red pepper flakes to your preferred level of spice.
- Fresh herbs like parsley or basil can be added for garnish.
