Description

A one-pan pasta dish featuring mushrooms, spinach, and Parmesan cheese.


Ingredients

  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 2 cups vegetable broth
  • 1 cup milk
  • 8 oz linguine, broken in half
  • 5 oz fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until softened, about 5-7 minutes.
  2. Add onion and cook until translucent, about 5 minutes.
  3. Stir in garlic, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in vegetable broth and milk. Bring to a simmer.
  5. Add broken linguine to the skillet, ensuring it’s mostly submerged. Cook, stirring occasionally, until pasta is al dente and most of the liquid has been absorbed, about 10-12 minutes.
  6. Stir in fresh spinach until wilted.
  7. Remove from heat and stir in Parmesan cheese.
  8. Season with salt and black pepper to taste. Serve immediately.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Adjust red pepper flakes to your preferred level of spice.
  • Fresh herbs like parsley or basil can be added for garnish.
