Delicious Peach Streusel Coffee Cake recipe.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 3 peaches, peeled and sliced
- Streusel topping (recipe below)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients.
- Pour batter into prepared pan. Arrange peach slices over batter.
- Sprinkle streusel topping over peaches.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
Notes
- For the streusel topping: Combine 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter (cut into pieces), and 1/2 teaspoon cinnamon. Mix until crumbly.
- You can substitute other fruits like apples or berries.
