Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 3 peaches, peeled and sliced
  • Streusel topping (recipe below)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients.
  6. Pour batter into prepared pan. Arrange peach slices over batter.
  7. Sprinkle streusel topping over peaches.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool before serving.

Notes

  • For the streusel topping: Combine 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter (cut into pieces), and 1/2 teaspoon cinnamon. Mix until crumbly.
