Description
Delicious and easy peach yogurt muffins. A perfect breakfast or snack option.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 cup plain yogurt
- 1 tsp vanilla extract
- 1 cup diced fresh peaches
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, combine sugar, melted butter, egg, yogurt, and vanilla.
- Add wet ingredients to dry ingredients and mix until just combined.
- Gently fold in diced peaches.
- Fill muffin cups about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- You can substitute frozen peaches.
- Add a streusel topping for extra flavor.
- Store muffins in an airtight container.
